HOT TIPS -
|
WHEN COOKING A STEAK, TAKE IT OUT THE
FRIDGE AND LEAVE IT TO COME TO ROOM TEMPERATURE. THIS ALLOWS THE
MEAT TO RELAX.
WHEN READY TAKE A LITTLE OIL, AND SMEAR ONTO EACH SIDE OF THE MEAT,
THEN SEASON WITH A LITTLE SALT AND PEPPER, FRESHLY GROUND IF POSSIBLE.
USE A RIDGED PAN AND MAKE SURE IT IS QUITE HOT BEFORE COOKING.
COOK AS REQUIRED, BUT REMEMBER LAMB AND BEEF ONLY REALLY NEED A
FEW MINUTES EITHER SIDE TO GET THE MAXIMUM FLAVOUR FROM THE MEAT
- DON'T OVERCOOK.
THEN ALLOW THE MEAT TO REST FOR 3 TO 4 MINUTES. |
