We source all our beef from nearby abbatoirs, from specialists that we have built up excellent working relationships with over the years. They can give us exactly what we are looking for, and more importantly a consistent product.
It is only the inexperienced butcher who would stick to just one breed, or meat from just one farm. Beef can vary from carcass to carcass, in a way that lamb, or pork does not. So you have to accept that in order to get high quality on a regular basis, then you need to work with different breeds from different farms.
It is not easy getting the best, you have to know by looking, that something is right, this only comes with experience, and the help of a grading system.
We only accept a certain grade of beef, and this results in the price that we charge. If you look at the beef dislayed in a supermarket, you will see a very wide (and confusing!) range of prices. This is due to the fact they use all grades of meat.
We only use the top graded Scotch beef, so if you take our steak mince for example, we only use a cut called chuck, its very lean, and is probably, the most expensive cut used for mince.
We don't sell cheap mince, if you ask for mince, you will get this high quality steak mince. Once you have compared this against a cheaper mince you will soon see the difference.
If we look at the more expensive cuts, the process is a bit more complicated. We stock up with what are known as roasts, its the section running along the back of the animal. This arrives on the bone, and weighs about 45-50kgs. These are hung up in our chill until they are a minimum of 3 weeks old. This process is called dry-aging. When they are ready we remove the bone (unless you're having a ribroast or a t-bone steak) and seperate the cuts into the relevant sections, fillet sirloin and ribeye. They are then put directly into the counter for you to buy.
In addition to all the regular cuts of beef, we can also supply more obscure ones such as shin, t-bone, chateaubriand and oxtail.

From early May, through to the following January, we source all our lamb from Robert Dalrymple Hamilton of Ballantrae.
He breeds Texel lambs on his fabulous hill farm, which sits above the Firth of Clyde, enjoying the salty winds! This is the reason why his lamb is regarded by many as some of the best lamb in Scotland.
In the shop, we can cut joints exactly how you need them, whether it be as butterflied leg of lamb, or a crown roast.
If you enjoy your haggis, you'll be pleased to know that we make it with the plucks of these very special lambs. And our scotch pies are made with the trimmings from the leg and flank, nothing is wasted.

We source all our pork from Robertson's of Ardrossan, who have been producing quality pork in Ayrshire since 1870.
The meat and bacon are all produced from Scottish born and reared, farm assured pigs.
Pork is naturally low on fat and is packed with protein. It helps to build strong bones and healthy muscles.
We sell all cuts from bone-in pork shoulders, to french-trimmed racks of pork. We can even order you a whole pig, if you fancied having your own hog roast!
We make all our own pork sausages here at the farm using pork belly and natural casings.

Working alongside the butchery, the kitchen takes a selection of cuts and turns them into tasty pies, classic dishes and savoury treats. We also produce a range of home-cooked meats, such as our own honey-roasted hams.
At the farm shop, you will find everything from steak pies, chicken pies and home-made soups, to gourmet sausage rolls, pasties and daily specials.
For larger groups, the kitchen creates 'party pots'. Choose from these classic dishes and it comes ready to serve in its own cast-iron pot, which can serve up to 16 people! (deposit required) Just re-heat and serve. Prices start at £40:
